Crock Pot Creamy Ranch Pork Chops

Found this one on Facebook.

Ingredients:
2 packages of boneless pork chops (we had 7)
2 cans cream of chicken soup (I used fat free)
2 packets ranch dressing mix
(of course if you don't have a large family like ours you would only make half of this!)

Put 1/2 of pork chops in crock pot, pour 1 can of soup over top and sprinkle with one package of ranch dressing mix.  Repeat layers.  Cook on low for 6 hours.

This was served with mashed potatoes and corn.

Our Review:  This was really good.  The pork chops were so tender and tasty and the gravy that was made was great over mashed potatoes.

Crockpot Chicken and Dumplings

Crockpot Chicken and Dumplings

Ingredients:
4-6 boneless skiness chicken breasts or thighs
1 box (32 oz) chicken broth (I used low sodium)
4 Tbsp. unsalted butter
3 cans cream of chicken soup (I used 2 + 2 bullion cubes)
1 small onion finely chopped (I used a few shakes of minced onion)
2 dashes of garlic powder
Salt and Pepper to taste
2 cans biscuits

Spray crock pot with non stick spray.  Put everything except the biscuits in and cook for 4-6 hours on high or 6-8 on low.  Remove chicken, cut biscuits into eight pieces each, add biscuit "dumplings" into crockpot and cover for another 30 minutes.  Meanwhile shred chicken and then add back into crockpot.

We served this over mashed potatoes with corn and mixed fruit.

Our Review:  I've never made dumplings before so I was a little unsure of how they were supposed to look/taste but everyone (even BOTH girls!) agreed that this was AWESOME!! Such great flavor!  It made a ton so I'm going to try freezing half and see what happens.

Crockpot Pork Chalupas



Crockpot Pork Chalupas

Ingredients:
Pork tenderloin or pork chops
2 cans pinto beans (drained and rinsed)
1 jar salsa
1 can green chiles (I used 1/2)
1 t. ground garlic
1 t. chili powder
1 t. cumin (didn't have so didn't use)
salt/pepper
tortillas
shredded cheese

Put frozen pork into the crockpot on high for 4-5 hours or low 6-8 hrs.  Remove pork and shred.  Rinse out crockpot and put pork back in with beans, salsa, chiles, garlic powder, chili powder, salt/pepper.  Cook on high for another hour.  Heat tortillas in oven.  Fill tortillas with crockpot mixture and cheese, roll.  Serve with sour cream.

Our Review:  The girls didn't care for this one but Mike and I liked it a lot.  Mike also liked this on top of tortilla chips.

Poppyseed Chicken

Poppyseed Chicken

Ingredients:
1 - 1 1/2 lb. chikcen breasts, boiled and cut into small pieces (I did this in the crockpot)
1 (16 oz.) cont. sour cream
2 cans cream of chicken soup
2 T of poppyseeds
1 sleeve Ritz crackers
1 stick of butter

Mix the first 4 ingredients and put in a 9x13 pan. Cover with crushed crackers. Melt stick of butter and pour on top. Bake for about 20 minutes at 350. We served this on top of rice.

Our Review: I loved this one. Brooke and Mike ate it but it wasn't their favorite :( But I will make it again b/c I loved it!

Crockpot Italian Chicken Alfredo

Crockpot Italian Chicken Alfredo

Ingredients:
4 (4oz) skinless, boneless chicken breast halves
1/4 cup water
1 pkg dry italian-style salad dressing mix
1 clove garlic, pressed (I just used minced garlic)
1 (8 oz.) pkg cream cheese, softened
1 can condensed cream of chicken soup
1 can chopped canned mushrooms (optional, I did not use)
1 (8 oz) package spaghetti or fettucine noodles
1 T chopped fresh parsley (optional)

Spray crockpot with non-stick spray. Place chicken breasts in (I put mine in frozen). Combine Italian dressing mix and water in a small bowl and pour over chicken. Sprinkle with garlic, cover and cook on low for 4 hours.

After 4 hours, shred chicken Whisk softened cream cheese and cream of chicken soup together in a bowl. Pour over chicken, add mushrooms (optional) and stir. Cover and cook on low for 1 additional hour.

Cook noodles according to package directions and drain.

To serve, spoon chicken and sauce over hot cooked pasta and sprinkle with parsley (optional).

We served this with garlic bread sticks and a salad.

Our Review: This was great. I've tried a few different alfredo recipes and have been disappointed in each, this one is SO yummy! Definately will make this one again!

Creamy Crockpot Chicken

Creamy Crockpot Chicken

Ingredients:

6 skinless boneless chicken breasts
1 t. garlic powder
salt/pepper
1 can cream of chicken soup
1 can cream of celery soup (could us mushroom)
1 can cream of cheddar or cheddar cheese soup
1 (8 oz.) container of sour cream

Place chicken in the crockpot and cover with garlic powder and salt & pepper. In bowl, combine all three soups and pour over chicken. Allow to cook on low for 6-8 hours or high 3-4 hours until chicken is cooked through. Pull chicken out and shred and then return to the crockpot. Stir in sour cream at end of cooking time.

Serve over noodles, rice or make into enchiladas.

Our Review: I served this over linguine noodles for the first time and we loved it! We froze the other half and will be making enchiladas with it!

Pork Chop Casserole

I made this one up.

Pork Chop Casserole

Ingredients:

1 1/2 cups uncooked rotini pasta
5 boneless pork chops
1 t. seasoned salt
1 t. minced garlic
1 t. minced onion
2 cans condensed cream of mushroom soup
2 cups shredded cheddar cheese
2 boxes stovetop stuffing, chicken or pork flavor

Place pork chops into crockpot and top with seasoned salt, garlic and onion. Cook on low 6-8 hours or hight 3-4 hours until pork is done. Remove and cut or pull into bite size pieces.

Preheat oven to 350.

Boil pasta as directed on box and drain. Make stuffing as directed on boxes.

Combine pasta, pork, soups and cheese and place in 9x13 pan. Cover with prepared stuffing.

Bake at 350 for about 30 minutes.

Our Review: This one is good, especially for stuffing lovers like Brooke and I!

Crockpot Fiesta Chicken Soup

Made this one up.

Crockpot Fiest Chicken Soup

Ingredients:

2 cans pinto beans, drained and rinsed
1 - 1 1/2 lb. chicken breast
salt/pepper
1 can corn
1 pkg. taco seasoning
2 cans diced tomato

Put all ingredients into crockpot and cook on low for 6-8 hours. Pull out chicken and shred and then return to crockpot. Serve with crushed chips, cheese and sour cream.

Our Review: This was good, nice flavor and filling! We froze half of this for a later date in a ziplock bag and it turned out well!

Crockpot Orange Chicken

Crockpot Orange Chicken

Ingredients:

1 1/2 lbs. boneless chicken cut in 2 inch chunks
1/2 cup flour
olive oil, for browning the chicken
1 T kosher salt
6 oz. (1/2 can) frozen orange juice concentrate, thawed
3 T brown sugar
1 t balsamic vinegar
3 T ketchup

Dredge chicken pieces with the flour, shake off excess. Heat olive oil in a large skillet on the stove and brown the chicken on all sides. There is no need to fully cook it, just sear it enough for the flour to stick and get a nice coating.

Put chickent pieces into slow cooker. In small bowl, combine the orange juice concentrate, brown sugar, balsamic vinegar, salt and ketchup. Taste, if you'd like the chicken to be a bit sweeter, add a touch more sugar. Pour sauce mixture evenly over the chicken, and toss gingerly to coat.

Cover and cook on low for 6 hours or on high for 3 to 4. Serve over white or brown rice.

Our Review: We did not care for this one. It was the first that I have tried that we felt was inedible. If you try it and it turns out good let me know so I can try again...maybe I did something wrong.

Pizza Bake

This one came from tasteofhome.com (with changes by me) and originally was call crock-pot pizza but I did this one in the oven to avoid cleaning cheese out of the crockpot :)

Pizza Bake

Ingredients:
1 pkg (16 oz) wide egg noodles
1 lb. ground beef
1/4 cup chopped onion (I didn't use this)
2 jars (26 oz each) spaghetti sauce (recipe called for one jar, definately needs two)
2 t. Italian seasoning
1 pkg sliced pepperoni, halved
3 cups (12 oz) shredded cheddar cheese
3 cups (12 oz) shredded mozzarella cheese
sliced black olives to taste
mushrooms (optional, I did not use)

Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion (optional) over medium heat to done, drain.

Stir together noodles, beef, pepperoni, seasoning, spaghetti sauce, black olives. Pour half of mixture in 13x9 pan, cover with 1/2 cheese; repeat layers. Bake at 350 for about 30 minutes until heated thru and cheese is melted.

CROCKPOT: If you want to do this one in the crockpot, cook the noodles and beef. Add spaghetti sauce, seasoning, black olives to beef. Coat the crockpot with cooking spray. Spread a third of the meat mixture on bottom, cover with a third of the noodles and pepperoni, sprinkle a third of the cheese. Repeat layers twice. Cover and cook on low for 3-4 hours or until heated through and cheese is melted.

Our Review: This was LOVED by all!! Very tasty, full of flavor.

We served this with salad and grapes.

Crockpot Swiss Casserole Chicken

Ingredients:
6 chicken breast halves
4-5 slices swiss cheese
1 can cream of mushroom soup (I used cream of chicken)
1/4 c. milk
2 c. stuffing mix (I used 1 box stove top)
1/2 c. butter, melted

Spray crockpot with cooking spray (I didn't and the cheese made for a hard clean up). Lay chicken breasts in crockpot. Top with cheese. Combine soupo and milk and spoon over cheese. Sprinkle stuffing mix on top. Drizzle melted butter over stuffing mix.

Cook on low 8-10 hours or high 3-4 hours. (I cooked for about 9 hours and the chicken seemed a little dry so I would go with 6-8 hours).

We served this with green beans and pears.


Our Review: This was very tasty, we will be making it again!

Crockpot Saucy Pork

Crockpot Saucy Pork

Ingredients:
1 can cream of chicken soup (I use 98% FF)
1/2 cup sour cream
1 pkg lipton onion soup mix (I only used 1/2 pkg)
Pork roast/chops/steaks (I used frozen steaks)
Egg noodles (I used half a package)

Place frozen pork in crockpot (if not using frozen add a little water to the pot). Pour remainder of ingredients on top. Cook 8 hours on low.

Remove pork and break into chunks. Boil noodles on stove, drain.

Pour noodles into crockpot with juices and return pork to crockpot. Mix well. and eat.

We served this with corn and peaches

Our Review: I really didn't think Brooke would like this since she is against all things "saucy" but she had seconds on her plate within minutes. Mike and I both liked this one as well. Lexy didn't try it.

BBQ Chicken

This is a tried and true favorite around here!

BBQ Chicken

Ingredients:
1 lb. chicken (with or without bones)
BBQ sauce (your favorite one)

I put the chicken in the crockpot in the morning and let cook all day. Take the chicken out and debone (if needed) and shred. Mix chicken with BBQ sauce and place in a casserole dish. Cook at 350 for 20 minutes.

I serve this with french fries (baked), corn and fruit.

Super Easy Chicken & Stuffing Casserole

Just threw this together tonight.

Super Easy Chicken & Stuffing Casserole

Ingredients:
1 lb. chicken
1 can cream of chicken soup
2 boxes Stove Top stuffing

Cook chicken (I threw it in the crockpot all day) and cut into cubes. Make stuffing according to box directions. Mix together stuffing, soup & chicken and spread in a 13x9 pan. Cook at 350 for 15-20 minutes until light brown on top.

I served this with corn and pears.

Our Review: YUM! Easy peasy and super delicious! Brooke had thirds!

Honey Crockpot Chicken

This was adapted from a Taste of Home recipe.

Honey Crockpot Chicken

Ingredients:
1/2 cup orange juice
1/3 cup honey
1/4 cup lemon juice
1/4 cup soy sauce
2 T minced gingerroot
12 garlic cloves (I used minced ~1/2 T)
1/2 t pepper
1/4 t salt
4-6 boneless skinless chicken breast halves

Place chicken breasts in crockpot. In small ball, combine remainder of ingredients and pour over chicken. Cook in crockpot for 6-8 hours on low.

Our Review: This was ok but had a pretty strong weird taste to it.

Bourbon Chicken

I found this recipe online but changed it quite a bit, I was so excited to find this b/c bourbon chicken is one of my favorites!

Bourbon Chicken

Ingredients:
boneless chicken breasts
1/4 t minced garlic
1/4 t ginger
1/2 t crushed red pepper flakes
1/4 cup apple juice
1/4 cup brown sugar
2 T ketchup
1 T cider vinegar
1/2 cup water
1/3 cup soy sauce

Cook chicken. I did this by cooking 4 frozen breasts in the crockpot on high for about 4 hours but you could also cook in a skillet with a little oil or in the microwave. Cut chicken into bite size pieces.

Add all ingredients (except chicken) to a saucepan, heating over medium heat until well blended.

Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes.

This can be served over rice but we didn't. We served this with lipton noodles, steamed veggies and peaches.

Our Review: This is REALLY good!!!! The girls didn't care for it but Mike and I both loved it. This WILL be made again. The leftovers will be yummy in a salad! I think I'll even try the sauce over beef and pork.

Crockpot Pasta Meatball Soup

This one was adapted from a Taste of Home recipe.

Crockpot Pasta Meatball Soup

Ingredients:
1 cup uncooked pasta (I used 1 1/2 cups whole wheat penne)
32 frozen Italian meatballs
2 cans (14 1/2 oz each) chicken broth
1 can (28 oz) diced tomatoes, undrained
1 1/2 cups frozen sliced carrots (could use corn in place of this)
1 can (16 oz.) kidney beans, rinsed and drained
1 jar (14 oz) meatless spaghetti sauce
1 cup frozen peas (I used canned)

Cook pasta according to package directions, drain. Meanwhile, combine remaining ingredients in the crockpot. Add pasta to crockpot and cook on low 6-8 hours.

We served this with garlic bread and fruit cocktail

Our Review: This soup was very easy and good! Definately will be made again.

Crockpot Chicken Tacos

Crockpot Chicken Tacos

Ingredients:
1 lb. boneless skinless chicken breasts (frozen or thawed)
2 cups Salsa
1 pkg Taco seasoning

Place chicken in crockpot. In bowl combine salsa and seasoning and pour over chicken. Cook on low for 5-6 hours or high 3-4 hours.

Shred chicken with forks and serve with tortillas (or hard shells), lettuce, tomatoes, cheese, sour cream, etc.

** My kiddos do not like salsa so I cooked the chicken in the crockpot by itself, shred with forks and then heated chicken and seasoning (and a little water) in a skillet.

Our Review: We all loved this, definately a keeper!!

Crockpot Herbed Turkey Breast with Orange Sauce

Ingredients:
1 boneless skiness turkey breast (2-3 lbs) or 2 turkey tenderloins
1 large onion, chopped (I just sprinked on minced onion)
3 cloves garlic, minced (again used minced garlic)
1 t dried rosemary
1/2 t black pepper
1/2 t salt
1 1/2 cups orange juice

Toss onion into crockpot. Combine garlic, rosemary, pepper and salt in a bowl. Slice raw turkey 3/4 way throughat 2 inch intervals. Rub turkey with garlic mixture, make sure to get in between slices as much as you can. Place turkey in crockpot on top of the onion, sliced side up. Pour juice over the top. Cook on low for 6-8 hours.

** I used a frozen turkey breast so I was unable to slice through it to put the spices on so I just put on the outside of breast.

We had this will stuffing (stove top), corn, mandarin oranges

Our Review: This turned out really good and tender. I think because I was unable to slice it as directed, mine didn't have really any of the orange juice taste but was still very good! Definately be making this one again.

Crockpot Roast

I do not care for the taste of pot roast so I wasn't sure if I would like this or not but I was very pleasantly surprised.

Crockpot Roast

Ingredients:
Beef Rump Roast

All I did was stick the thawed rump roast in the crockpot with just a tiny bit of water (I would not have put in the water if the roast had been frozen). Cook it on low for 6-8 hours. Remove from crockpot and shred with two forks.

Our Review: This had a great taste all by itself (Mike & I kept sampling it)...and I didn't add any seasonings! Half of the shredded beef was used for open face sandwiches with brown gravy poured over the top of bread, potatoes and beef. The other half has been frozen for bbq beef sandwiches at a later date.
