Easy Baked Pork Chops

Ingredients:
8 boneless pork chops
1 Tbsp olive oil
2 tsp salt and pepper
2 tsp garlic powder
1 tsp onion powder
Directions:
1. Rub pork chops with olive oil.
2. Season with salt, pepper, garlic powder and onion powder and rub to coat.
3. Lay in sprayed baking dish.
4. Bake at 375 for 25-30 minutes.

Cinnamon Roll Casserole

Found this one on Pinterest and link is not working so I want to preserve the recipe!

Ingredients:

2 T. melted butter or baking spray
2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
4 eggs
1/2 cup heavy whipping cream
2 t. ground cinnamon
2 t. vanilla
1 cup chopped pecans
1/4 cup maple syrup

Heat oven to 375. Pour melted butter into ungreased 13x9 pan. Separate both cans of dough into 16 rolls; set icing aside. Cut each roll into 8 pieces, place pieces over the butter in the pan.

In a medium bowl, beat eggs. Beat in cream, cinnamon and vanilla until well blended; gently pour over roll pieces. Sprinkle with pecans; drizzle with 1/4 cup maple syrup.

Bake 20 to 28 minutes or until golden brown. Cool 15 minutes. Meanwhile, remove covers from icing, microwave on medium (50%) for 10 to 15 seconds or until thin enough to drizzle.

Drizzle icing over top. If desired, spoon syrup over each serving.

We love this one!! We serve this with bacon or sausage and fruit; usually for dinner.

Crock Pot Creamy Ranch Pork Chops

Ingredients:
2 packages of boneless pork chops (we had 7)
2 cans cream of chicken soup (I used fat free)
2 packets ranch dressing mix
(of course if you don't have a large family like ours you would only make half of this!)

Put 1/2 of pork chops in crock pot, pour 1 can of soup over top and sprinkle with one package of ranch dressing mix.  Repeat layers.  Cook on low for 6 hours.

This was served with mashed potatoes and corn.

Our Review:  This was really good.  The pork chops were so tender and tasty and the gravy that was made was great over mashed potatoes.

Ingredients:
1 pkg yellow or white cake mix
2 eggs (beaten)
5 Tbs melted butter
1 pkg chocolate chips **

Preheat oven to 350.  Put all ingredients in bowl and mix.  Put into 9x13 pan sprayed with cooking spray.  Bake for 20-25 min.

** could use choc. chips, peanut butter chips, mint chips, m&m's, or any candy bar cut up (reeses, kit kat, hersheys, etc.)

Our Review:  I made this with a bag of mint chips and it turned out great!  Very easy and yummy!  Will definitely be trying different candies in this one for a quick dessert.

Olive Garden Alfredo

Ingredients:
1 pkg penne pasta
1 stick of butter 
1 clove of minced garlic
1 pint of heavy cream
1 cup of fresh Parmesan cheese
2 tbsp cream cheese  (I use 2 wedges laughing cow)
1/4 tsp salt
1/2 tsp white pepper

Cook pasta as directed.   In a skillet over medium heat melt butter and add garlic and cook for two minutes.  Add in heavy cream and cream cheese and heat until bubbling, but not boiling. Add in parmesan cheese and mix until the cheese melts. Sprinkle in salt and pepper to taste. Mix the pasta into the sauce. 
 
This was served with a salad and strawberries.
 
Our Review:  This is one of my favorite recipes.  So tasty.  Add a little milk to heat up the next day for lunch!

Breakfast Tator Tot Casserole

BREAKFAST TATOR TOT CASSEROLE

Ingredients:
1 lb. ground pork sausage
2-4 cups shredded cheddar cheese
2 cups milk
4 eggs
2 lbs. frozen tater tots

Preheat oven to 350 degrees.

Cook ground sausage until no longer pink.  Spread sausage evenly in the bottom of a 9x13 pan sprayed with non-stick spray.  Spread cheese over meat.   In large bowl, beat together milk and eggs, pour over cheese.  (may be refrigerated overnight at this point).

Top with frozen tater tots.

Bake for 45 minutes or until tator tots are nicely browned.  Cool for 5 to 10 minutes before serving.

Our Review:  This was excellent!  We love breakfast for dinner and this didn't disappointment.

Easy Pumpkin Pie

EASY PUMPKIN PIE

Ingredients:
2 refrigerated pie crusts
1 (29 oz) can pure pumpkin (not pie filling)
1 (14 oz) can sweetened condensed milk
1 (12 oz) can evaporated milk
4 large eggs
2 tsp cinnamon
2 tsp pumpkin pie spice
2 tsp vanilla
1/2 tsp salt

Preheat oven to 425 degrees.

Following package directions, prepare pie crusts and set aside.

In large bowl, whisk together eggs, then add pumpkin, the full can of sweetened condensed milk and about 3/4 to entire can of evaporated milk (depending on how thick you like the filling).  Stir well to combine.  Add cinnamon, pumpkin pie spice, vanilla and salt.  Stir well to combine.

Divide mixture into the two pie shells.  Place pies in oven and bake for 15 min. at 425 degrees then reduce to 350 degrees for an additional 35-45 minutes or until knife in center comes out clean.  Allow to cool for two hours.  Serve immediately or refrigerate.

Our Review:  Lexy (now 10!!) made these pies following his recipe this year!  They turned out perfect and were very tasty.
