Found this one on bettycrocker.com but had to change some things for what I could find.
Barbecue Beef Shepherd's Pie
Ingredients:
1 lb. lean ground beef
8 med. green onions (I didn't use)
1 cup barbecue sauce
1 can (11 oz) mexicorn (I used 1/2 can)
1 can (4oz) green chiles, undrained (I used 1/2 can)
1 pkg Idahoan Four Cheese Instant Potatoes
1/2 cup shredded cheddar cheese
1 cup corn chips
Cook ground beef (and 1/2 of onions if using), drain. Stir in barbecue sauce, mexicorn and chiles. Heat to boiling, reduce heat to low to keep warm.
Meanwhile, cook potatoes as directed on package. You can stir in more mexicorn and onions, I chose not to. Let stand for a few minutes.
Spoon potatoes onto center of beef mixture, leaving room around rim of pan. Sprinkle cheese on potatoes and sprinkle fritos around the edge of the pan.
Makes 6 servings
Our Review: This one got rave reviews online but as I was making it I wasn't so sure about it and told hubby there was still time to go to Sonic :) But we ended up LOVING this! The flavors work very well together!

Tater Tot Casserole

Tator Tot Casserole
Ingredients:
1 lb. ground beef or turkey, seasoned (I used s/p, minced onion, minced garlic)
1 2 lb. bag tator tots
1 can cream of mushroom soup
1 can cream of chicken soup
1 can evaporated milk
Brown meat, drain. Place meat in 13x9 pan. Cover with tater tots. Mix soups & milk together. Pour over top of tator tots. Bake at 350 for 45 min. or until tator tots are done.
Our Review: Mike asked me to find this one. We all really enjoy it!

Taco Pasta

Taco Pasta
Ingredients:
1 lb. ground beef
1 pkg. (1 1/4 oz.) taco seasoning
1 can (15 oz.) tomato sauce
1 pkg. (8 oz.) shell macaroni, cooked and drained
1 can (4 oz. ) chopped green chilies
1 1/2 cups shredded cheddar cheese
In a skillet, brown ground beef over medium heat. Drain and add taco seasoning, tomato sauce and green chilies. Stir in cooked macaroni. Place in a 9x13 pan. Top with cheese. Bake at 350 for 30 minutes or until heated through.
Our Review: We all really liked this, seconds for everyone (except for Lexy who has decided to turn into the picky kid!).

Easy Lasagna

Easy Lasagna
Ingredients:
1 lb. ground beef
1 1/2 jars spaghetti sauce
32 oz. cottage cheese
2 eggs
1/2 c. parmesan cheese
2 t dried parsley
3 cups shredded mozzarella
salt/pepper
lasagna noodles
Brown and drain beef. Add spaghetti sauce and simmer.
Mix cottage cheese, 2 cups of mozzarella cheese, eggs, half of the parmesan, parsley and salt/pepper.
Cover bottom of 9x13 pan with 1/3 spaghetti sauce/meat mixture. Cover sauce with uncooked lasagna noodles (I used 4). Spread 1/2 of the cheese mixture on top of noodles. Repeat layers until everything is used up ending with spaghetti sauce/meat mixture. Sprinkle remaining 1 cup of mozzarella and 1/4 cup parmesan on top. Cover with foil and bake at 350 for 45 minutes. Uncover and bake for 10 more minutes. Let stand 10-15 minutes before serving.
Our Review: Mike and I loved this (Brooke was gone). It was so easy to make too!

Pizza Bake
This one came from tasteofhome.com (with changes by me) and originally was call crock-pot pizza but I did this one in the oven to avoid cleaning cheese out of the crockpot :)
Pizza Bake
Ingredients:
1 pkg (16 oz) wide egg noodles
1 lb. ground beef
1/4 cup chopped onion (I didn't use this)
2 jars (26 oz each) spaghetti sauce (recipe called for one jar, definately needs two)
2 t. Italian seasoning
1 pkg sliced pepperoni, halved
3 cups (12 oz) shredded cheddar cheese
3 cups (12 oz) shredded mozzarella cheese
sliced black olives to taste
mushrooms (optional, I did not use)
Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion (optional) over medium heat to done, drain.
Stir together noodles, beef, pepperoni, seasoning, spaghetti sauce, black olives. Pour half of mixture in 13x9 pan, cover with 1/2 cheese; repeat layers. Bake at 350 for about 30 minutes until heated thru and cheese is melted.
CROCKPOT: If you want to do this one in the crockpot, cook the noodles and beef. Add spaghetti sauce, seasoning, black olives to beef. Coat the crockpot with cooking spray. Spread a third of the meat mixture on bottom, cover with a third of the noodles and pepperoni, sprinkle a third of the cheese. Repeat layers twice. Cover and cook on low for 3-4 hours or until heated through and cheese is melted.
Our Review: This was LOVED by all!! Very tasty, full of flavor.
We served this with salad and grapes.

This one comes from the back of the Hunts Four Cheese Sauce, with a couple of changes.
Baked Ziti
Ingredients:
1 lb. ground beef or mild pork sausage
16 oz. ziti noodles
8 oz. shedded mozzerella cheese
2 cans Hunts Four Cheese Spaghetti Sauce
Cook and drain beef or sausage. Cook ziti noodles according to package directions. Mix cooked ziti, beef/sausage and sauce and pour into 9x13 pan. Top with mozzerella.
Bake at 350 for 20-30 minutes to heat through and cheese melts.
Our Review: We have had this one a couple of times and we really like it. We have tried both beef and sausage and both are equally yummy.
We serve this with salad, garlic bread and fruit.

Pizza Cups
This one came from a kids cookbook.
Pizza Cups
Ingredients:
2 cans refrigerated biscuits
1 lb. ground beef
1 jar pizza sauce
1/2 - 1 cup shredded mozzarella cheese
Preheat oven to 375. Spray two muffin pans with nonstick spray. Press a biscuit evenly into muffin cups (cover bottom & sides). Chill until ready to fill.
Brown ground beef, drain. Stir in pizza sauce and heat through.
Evenly spoon beef mixture into muffin cups. Bake 15 min. Sprinkle with cheese and bake an additional 5 minutes or until cheese is melted and biscuits are golden. Let stand 5 minutes. Gently remove pizza cups from pan.
I served this with raw carrots/cucumbers, mandarin oranges.
Our Review: We all really liked this one. The girls said it tasted just like pizza. I think I'll try to add pepperoni pieces and black olives to it next time!

Crockpot Pasta Meatball Soup
This one was adapted from a Taste of Home recipe.
Crockpot Pasta Meatball Soup
Ingredients:
1 cup uncooked pasta (I used 1 1/2 cups whole wheat penne)
32 frozen Italian meatballs
2 cans (14 1/2 oz each) chicken broth
1 can (28 oz) diced tomatoes, undrained
1 1/2 cups frozen sliced carrots (could use corn in place of this)
1 can (16 oz.) kidney beans, rinsed and drained
1 jar (14 oz) meatless spaghetti sauce
1 cup frozen peas (I used canned)
Cook pasta according to package directions, drain. Meanwhile, combine remaining ingredients in the crockpot. Add pasta to crockpot and cook on low 6-8 hours.
We served this with garlic bread and fruit cocktail
Our Review: This soup was very easy and good! Definately will be made again.

1 lb. ground beef, cooked and drained
1 1/2 cup shredded cheddar cheese

sour cream
black olives

Preheat oven to 400. Mist every other cup of two 12 cup muffin tins with cooking spray. Press a tortilla into each sprayed cup, flattening out edges, and bake until golden, about 8 min.
Divide beans among tostadas, top with beef and cheese. Return to oven and bake until warmed through, 7-10 min.
Place tostados on plate and top with toppings as desired.
We served this with cantelope slices.
Our Review: This one tasted okay but was really a mess to eat and we couldn't fill them very well so there was a lot of "extra" tortilla.

Crockpot Roast
I do not care for the taste of pot roast so I wasn't sure if I would like this or not but I was very pleasantly surprised.

Ingredients:
Beef Rump Roast
All I did was stick the thawed rump roast in the crockpot with just a tiny bit of water (I would not have put in the water if the roast had been frozen). Cook it on low for 6-8 hours. Remove from crockpot and shred with two forks.
Our Review: This had a great taste all by itself (Mike & I kept sampling it)...and I didn't add any seasonings! Half of the shredded beef was used for open face sandwiches with brown gravy poured over the top of bread, potatoes and beef. The other half has been frozen for bbq beef sandwiches at a later date.

1/2-1 lb. ground beef
1 can Pillsbury refrigerated classic pizza crust
1/2 cup pizza sauce
4 oz. (1 cup) shredded mozzarella cheese
1/4 cup chopped green peppers (I didn't use)
1/4 t dried Italian seasoning
Heat oven to 400. Spray cookie sheet with nonstick spray. Brown ground beef in skillet until done, drain.
Unroll dough, place on cookie sheet. Starting at center, press out dough with hands to form 12x8 inch rectangle.
Spread sauce over dough to within 2 inches of long sides and 1/2 inch of short sides. Place beef lengthwise down center, forming 3 inch wide strip and to within 1/2 inch of short sides. Top with cheese, pepper, seasoning. Fold long sides of dough over filling, press edges to seal.
Bake at 400 for 14 to 20 minutes or until crust is golden brown.
We served this with a salad and fruit cocktail
Our Review: This was great. Brooke said it looked and tasted like a giant pizza roll. Definately will be made again.

This is a childhood favorite of mine, I just can't eat spaghetti without this sauce. This one is LOVED by everyone in the family.

Ingredients:
2 lb. ground beef
4 sm. can tomato sauce
4 pkg. Lawry's original spaghetti seasoning
5 cans water
Put tomato sauce in large pan, stir in seasoning. Add water mixing thoroughly after each can. Heat to boiling and then set aside.
Cook beef and drain. Mix beef into pan of sauce. Let sit for several hours. Heat before serving.

2 lbs. ground beef
1 whole onion (I used minced onion instead)
1 can kidney beans
1 can red beans
1/2 cup brown sugar
1 t prepared mustard
1 can pork and beans
1/2 t dry mustard
1/2 cup ketchup
1/2 t vinegar (it called for more but I didn't want it overwhelming)
Cook bacon and put in crockpot. Brown beef and onion, drain and put in crockpot. Add all other ingredients to crockpot (do not drain the beans). Cover and cook on low for 6-8 hours.
We served this with cornbread and grasshopper pie.
Our Review: This was REALLY good! Mike, I, Lexy, Kelly (Brooke's friend), Maamaw & Grandpa Tom all loved it. Brooke didn't care too much for it. This will definately be put in the recipe box and made again.

Ingredients:
1 lb. ground beef
1 pg. Williams chili seasoning (pkg for 2lb. meat)
8 oz. macoroni noodles
20-25 oz. tomato juice (I used 2 11.5 oz. cans)
Cook beef and drain. Cook noodles and drain. Add beef and chili seasoning to noodles and stir well. Add tomato juice, stir. Heat and eat.
We serve this over bread with sweet banana wax peppers cut up on top and cheese to the side.

This is a tried and true favorite in our house!

Ingredients:
8 Tortillas (flour)
1 lb. ground beef
1 lrg. (19 oz.) can enchilada sauce (I use mild)
1/2 pkg. enchilada seasoning
cheddar cheese
green chiles (optional)
Cook beef and drain. To beef add enchilada seasoning, 1/3 can enchilada sauce and 1/2 cup cheddar cheese, heat. Pour 1/3 can of the sauce into a 13x9 pan. With each tortilla, dip into sauce in pan, fill with 1/4 cup meat mixture, roll and place seamside down in pan. Pour remaining sauce over enchiladas and top with remaining cheese. Bake at 350 for 20 min.
We served this with a salad (with eggs, cheese cubes, crutons, carrots) and fruit cocktail.

Ingredients:
1 lb. ground beef, cooked and drained3 potatoes
1 T minced onion
1 T minced garlic
4 cups chicken stock
1 lb. velveeta
1/3 can rotel tomatoes
Put chicken stock, onion & garlic into crockpot and stir. Cut potatoes into 1 in. cubes (I left the skin on) and add to stock. Add beef and rotel tomatoes. Cube velveeta and add to crockpot. Cook on low 5-7 hours.
We served this with breadsticks, pears and strawberry cake.
Our Review: On a scale of 1 - 5 (1-awful, 5 great) Mike - 4, Me-3.5, Brooke-3. This was good but not great so I doubt this one will be served again.

Chili
This is a tried and true favorite that I've created using mom's recipe and adding some of my own things.
Chili
Ingredients:
1 lbs. ground beef
2 can chili beans (I use Brook's mild)
1 can pinto beans, drained/rinsed
1 pkg Williams chili seasoning (the one for 2lbs. meat)
1 can diced tomatoes
tomato juice
Brown and drain ground beef. Add all ingredients except tomato juice to a big pot and mix together. Add enough tomato juice to your desired consistancy. Heat and eat. This is best if you make ahead and let sit before heating.
We served this with raw carrots & celery, crackers, mandarin oranges & cinnamon rolls

3 cups crushed tortilla chips
2 cups sour cream
1/2 cup chopped tomato
2 cups shredded cheddar cheese
Preheat oven to 350. Cook and drain beef. Stir in salsa, reduce heat and simmer for 20 min. or until liquid is absorbed. Stir in beans and heat through. Spray 13x9 pan with cooking spray. Spred crushed tortilla chips in pan and spoon beef mixture over chips. Spread sour cream on top of beef. Sprinkle tomatoes over sour cream. Top with cheese. Bake for 30 minutes.
Our Review: Mike and I both REALLY like this one! The girls...not so much. I will put this one in the recipe box and make it again and fix something else for the girls!

Meatball Bake
This recipe came from another blogger, Foster Mama over at Postcards from Insanity.
Meatball Bake
Ingredients:
1 pkg Stove Top Chicken Stuffing (I used low sodium)
1 can cream of mushroom soup (I used 98% fat free)
1/4 cup milk or water
1 pkg (1 lb.) frozen meatballs (or you could make your own)
1 cup shredded cheddar cheese
Prepare stuffing as directed on package and set aside. Combine soup and milk in 13x9 pan. Stir in meatballs and sprinkle with cheese. Top with prepared stuffing. Bake at 400 for 20-25 minutes.
This was served with corn-on-the-cob and pears.
Our Review: This was VERY good!! Very easy and convenient to make. Mike said he liked it better than pork chops and stuffing. Brooke liked everything except the cheese in it (she doesn't care for cheese in things), Lexy tried a bite and said "yep it tastes like meatballs". This recipe will definately be added to our recipe box and be used again!

Easy Pleasing Meat Loaves
This recipe came from the back of a Stove Top stuffing box. This is our FAVORITE meat loaf recipe, oh so delicious!
EASY PLEASING MEAT
LOAVES
Ingredients:
2 lb. ground beef
1 pkg (6 oz) Stove Top Stuffing (I use the low sodium chicken one)
1 cup water
2 eggs, beaten
1 cup original barbecue sauce, divided
Mix all ingredients except 1/2 cup of the barbeque sauce with hands.
Shape meat mixture into 4 oval loaves on a foil lined baking sheet sprayed with cooking spray. Top loaves with the remaining barbeque sauce.
Bake at 400 for 30 minutes or until centers are no longer pink.
Makes 8 servi
