Found this one on Pinterest and link is not working so I want to preserve the recipe!
Ingredients:
2 T. melted butter or baking spray
2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
4 eggs
1/2 cup heavy whipping cream
2 t. ground cinnamon
2 t. vanilla
1 cup chopped pecans
1/4 cup maple syrup
Heat oven to 375. Pour melted butter into ungreased 13x9 pan. Separate both cans of dough into 16 rolls; set icing aside. Cut each roll into 8 pieces, place pieces over the butter in the pan.
In a medium bowl, beat eggs. Beat in cream, cinnamon and vanilla until well blended; gently pour over roll pieces. Sprinkle with pecans; drizzle with 1/4 cup maple syrup.
Bake 20 to 28 minutes or until golden brown. Cool 15 minutes. Meanwhile, remove covers from icing, microwave on medium (50%) for 10 to 15 seconds or until thin enough to drizzle.
Drizzle icing over top. If desired, spoon syrup over each serving.

Breakfast Tator Tot Casserole
BREAKFAST TATOR TOT CASSEROLE

Ingredients:
1 lb. ground pork sausage
2-4 cups shredded cheddar cheese
2 cups milk
4 eggs
2 lbs. frozen tater tots
Preheat oven to 350 degrees.
Cook ground sausage until no longer pink. Spread sausage evenly in the bottom of a 9x13 pan sprayed with non-stick spray. Spread cheese over meat. In large bowl, beat together milk and eggs, pour over cheese. (may be refrigerated overnight at this point).
Top with frozen tater tots.
Bake for 45 minutes or until tator tots are nicely browned. Cool for 5 to 10 minutes before serving.
Our Review: This was excellent! We love breakfast for dinner and this didn't disappointment.

Banana Oatmeal

Banana Oatmeal
Ingredients:
1 1/4 cups skim milk
1 pinch salt
1 tablespoon brown sugar
1/8 teaspoon vanilla
1/2 cup oatmeal (not instant)
1 banana, mashed
1 pinch allspice (I used cinnamon)
Bring milk, salt, vanilla, and brown sugar to a boil. Add oats and allspice. Reduce to medium boil for 5 minutes. Add banana, turn off heat, let set for 2-3 minutes. Put into 2 bowls, sprinkle a little more brown sugar on top.
Our Review: I was looking for something warm and filling, this fits the bill. I don't care for the taste of oatmeal and this nicely masks that oatmeal-y taste :)

Pop Up Pancakes

Pop Up Pancakes
Ingredients:
1 c. milk
1 c. flour
6 eggs
1/4 c. melted butter
dash of salt
Preheat oven to 400. Blend all ingredients. Grease muffin tins. Bake 15 minutes or until puffy & golden. The pancakes will puff up in the oven and then will sink once removed from the oven. Makes 24.
We served this with bacon, sausage, syrup and powdered sugar.
Our Review: These were loved by ALL. Lexy ate more than the rest of us! Next time I'll try using cupcake liners or grease the muffin tins better as they tried to stick. We think these taste like a cross between a pancake and french toast, YUM!!

Yummy Banana Bread
One of the things that I do to try to keep the stress & crazies from our morning routine is to have breakfast items in the freezer ready to defrost and quickly eat. I usually have waffles, pancakes, homemade french toast sticks, etc. in the freezer. Yesterday I saw this recipe for banana bread on one of my favorite blogs, Who Says Eight is Enough, thanks Debi! I thought if I used my Perfect Brownie Pan (I absolutely love this thing) that I could freeze the little squares and they could be defrosted one or two at a time for breakfast.
My Favorite Banana Bread
Ingredients
1/2 c. unsalted butter (I have replaced this MANY times with 1/2 c. unsweetened applesauce)
1 c. sugar
2 eggs
2 tsp. vanilla
2 c. flour, sifted
1 tsp. salt
1/2 tsp. baking soda
1 1/2 c. ripe bananas, mashed (about 5)
2/3 c. nuts, chopped (optional)
(I have also substituted chocolate chips, or coconut & dried pineapple)
Preheat oven to 325.
Grease a 2 qt. loaf pan or two 2lb. loaf pans*
In a large bowl, cream butter & sugar. Add eggs, vanilla & bananas. Blend well.
Beat in remaining ingredients.
Pour into loaf pan.
Bake 1 hour & 20 minutes or until toothpick inserted in center comes out clean.
Remove from pan while still warm.
Cool before slicing.
The only things I did differently to this recipe was that I didn't use nuts but I did put about 3/4 c. mini choc. chips in. I also used the Perfect Brownie Pan and a 9x9 square pan instead of two loaf pans. I cooked mine for about 28 min. For freezing I just let the bread cool then put the individual squares into a gallon ziptop bag and threw in the freezer.
You could also do muffins and cook for 15 - 20 min

Banana Chocolate Chip Oatmeal Cookies

Banana Chocolate Chip Oatmeal Cookies
Ingredients:
1 1/4 cups all purpose flour
1 t. baking soda
1/2 t. salt
4 T. unsalted butter, at room temperature
1/4 c. granulated sugar
1/2 c. light brown sugar, packed
1 t. vanilla extract
1 large egg
1 large banana, mashed
2 c. old fashioned oats
1 c. semisweet chocolate chips
In a medium bowl, whisk together flour, baking soda and salt. Set aside.
In a large mixing bowl, combine butter and sugars, mix until smooth. Add in vanilla extract and egg. Next, add in banana, beat well.
Slowly add in flour mixture until just combined. Stir in oats and chocolate chips.
Drop cookie dough by heaping tablespoons 2 inches apart onto baking sheets that have been lined with parchment paper or sprayed with cooking spray. Bake at 350 for 15-18 minutes (watch this b/c mine took about 10-12 min.) or until golden. Remove cookies from pans; cool completely on wire racks.
Makes 2 1/2 dozen cookies. (Mine made 3 dzn)
Our Review: These were good! They would make nice breakfast cookies as well with the oats and banana!

French Toast Sticks

French Toast Sticks
Ingredients:
8 slices Texas Toast bread
1/4 cup melted butter
4 eggs
1/3 cup sugar
1/4 t. cinnamon
2/3 cup milk
3/4 t. vanilla
Preheat oven to 350. Cut each slice of bread into three "sticks". In a bowl, mix together melted butter, eggs, sugar, cinnamon, vanilla and milk, beat well.
Dip sticks into egg mixture and place on a cookie sheet that has been sprayed with cooking spray. If there is any dip left, you can drizzle it ove the sticks.
Bake for 25 minutes on middle oven rack of oven. Turn halfway through baking time. Allow to cool.
To Freeze for later: flash freeze on cookie sheet, remove and place in a ziplock bag.
To Reheat: place 3 sticks on a microwave-safe plate and heat on high for 1 minute until warm. Serve with syrup.
Our Review: These were very yummy. I doubled this recipe. They did tend to stick to the pan even with spraying the pan. I think next time I'm going to try holding out the sugar and cinnamon (mixing them together) and after dipping in the egg mixture dip in the sugar/cinnamon mixture to cover. Thinking maybe that would help with the sticking problem and be super yummy!

1 t. baking soda
1/4 t. salt

Preheat oven to 350. Line muffin tin with baking cups. Cream sugar and margarine. Add egg, mix well. Blend in remaining ingredients. Fill muffin tins 2/3 full and bake for 15-18 min.
Our Review: Lexy loved these at school. We'll be trying them for after school snack.

Peanut Butter Muffins
This is another one I got off of allrecipes.com and made my own changes to.
Peanut Butter Muffins
Ingredients:
2 cups flour
1/2 cup sugar
2 T. brown sugar
1 T. baking powder
1/2 t. salt
1 cup peanut butter
2 T. cold butter or margarine
1 cup milk
2 eggs
cinnamon/sugar mixture
Combine sugar, flour, brown sugar, baking powder, and salt. Cut in the peanut butter and butter until it resembles course crumbles. Beat eggs & milk and stir into dry ingredients until moist. Fill lined muffin tins 2/3 full. Sprinkle cinnamon/sugar mixture on top.
Bake at 400 for 15-17 minutes. Serve with butter and/or jelly.
Our Review: These are going into the freezer for quick breakfast options for the girls, haven't tried yet! UPDATED: we tried these and they are YUMMY! We had them plain but with jelly would also be good!
Make Ahead French Toast
This one is based on a recipe on allrecipes.com with some changes from me.

1 loaf french bread, cut into about 12 1" slices
7 eggs
1 1/2 c. milk
2 t. vanilla extract
1/2 c. butter, melted
1 c. brown sugar
2 T. maple syrup (I just used regular syrup)
1 c. chopped pecan (option, I did not use)
Mix eggs, milk and vanilla in a bowl, pour mixture into bottoms of a 13x9 and an 8x8 square pan. Dip each piece of bread into egg mixture (both sides) and then sit on top of egg mixture in pan. I got 8 in the 13x9 and 4 in the 8x8. Refrigerate over night. In the morning mix together butter, brown sugar, syrup and pecans and spoon mixture over each piece of bread.
Cook at 350 for 40-45 minutes.
Our Review: This was delicious, didn't even need syrup over top! I think it would also be good with cinnamon/sugar mixture over top instead of brown sugar, butter, syrup mixture! Think next time I'll try to make these into french toast sticks and freeze for the girls for breakfasts.

Ingredients:
24 oz. frozen shredded potatoes
2 cups shredded cheese
2 cups cooked ham
1 can cheddar cheese soup
2 soup cans full of milk
10 eggs
salt & pepper to taste
Combine all ingredients except shredded cheese. Mix well. Pour into a 13x9 pan. Bake at 350. The recipe said for 45-50 min. but I had to cook mine for 70 min...until knife inserted in center comes out clean. Add shredded cheese to top and bake for another 5 min. until melted.
I served this with peaches and sour cream to top.
Our Review: Mike and I really liked this. I made it with the potatoes still frozen may try thawed next time to see if it takes less time. Very filling.

Super Simple Sausage Gravy
I had this recipe written on a piece of paper so I'm not sure where it came from.
Super Simple Sausage Gravy
Ingredients:
1 lb Bob Evans orig. recipe or country sausage roll
1/2 cup flour
4 cups milk
Salt & Pepper to taste
Crumble & cook sausage in large skillet until browned. Stir in flour until dissolved. Gradually stir in milk. Cook gravy until thick and bubbly. Season with salt and pepper to taste.
This was served with biscuits, eggs, bacon, hashbrowns, bananas
Our Review: This gravy was very good. We will definately have it again!
