Guacamole


Guacamole

Ingredients:
Avocado
1/4 t salt
2 T salsa (I used 1/2 chopped tomato instead)
3/4 t garlic powdre
1/2 t lemon or lime juice

This recipe can be doubled/tripled whatever according to your crowd size.

Cut the avocado in half, squeeze out the pit and scoop the fruit into a bowl.

Add the salt, juice, salsa/tomatoes, and garlic powder. Mash it together with a fork.

Taste. If you can't taste the avocado much, add a bit of salt. If it's a little flat, dribble a little juice in.

You can stir in cilantro and/or chopped onion is you desire.

Our Review: I'm the only guacamole eater in the house and I have to say this is excellent! I served it with bacon/cheese quesadillas and also had a little on tortilla chips, yum!

BBQ Chicken

This is a tried and true favorite around here!

BBQ Chicken

Ingredients:
1 lb. chicken (with or without bones)
BBQ sauce (your favorite one)

I put the chicken in the crockpot in the morning and let cook all day. Take the chicken out and debone (if needed) and shred. Mix chicken with BBQ sauce and place in a casserole dish. Cook at 350 for 20 minutes.

I serve this with french fries (baked), corn and fruit.

Paula Deen's Mac & Cheese

Paula Deen's Mac & Cheese

Ingredients:
2 cups dried elbow macaroni, cooked and drained (makes 4 cups)
2 cups shredded cheddar cheese
3 eggs, beaten
1/2 cup sour cream
4 T butter, cut into pieces
1/2 t salt
1 cup milk

Preheat oven to 350. Once you have the macaroni cooked and drained, place in a large bowl and while still hot add the cheese . In a seperate bowl, mix together the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture. Pour into a greased 13x9 pan. Bake 30 to 45 minutes. Top with additional cheese if desired.

Our Review: This was dry and bland. I'm not sure why, I had such high hopes.

Super Easy Chicken & Stuffing Casserole

Just threw this together tonight.

Super Easy Chicken & Stuffing Casserole

Ingredients:
1 lb. chicken
1 can cream of chicken soup
2 boxes Stove Top stuffing

Cook chicken (I threw it in the crockpot all day) and cut into cubes. Make stuffing according to box directions. Mix together stuffing, soup & chicken and spread in a 13x9 pan. Cook at 350 for 15-20 minutes until light brown on top.

I served this with corn and pears.

Our Review: YUM! Easy peasy and super delicious! Brooke had thirds!

Pizza Cups

This one came from a kids cookbook.

Pizza Cups

Ingredients:
2 cans refrigerated biscuits
1 lb. ground beef
1 jar pizza sauce
1/2 - 1 cup shredded mozzarella cheese

Preheat oven to 375. Spray two muffin pans with nonstick spray. Press a biscuit evenly into muffin cups (cover bottom & sides). Chill until ready to fill.

Brown ground beef, drain. Stir in pizza sauce and heat through.

Evenly spoon beef mixture into muffin cups. Bake 15 min. Sprinkle with cheese and bake an additional 5 minutes or until cheese is melted and biscuits are golden. Let stand 5 minutes. Gently remove pizza cups from pan.

I served this with raw carrots/cucumbers, mandarin oranges.

Our Review: We all really liked this one. The girls said it tasted just like pizza. I think I'll try to add pepperoni pieces and black olives to it next time!

Honey Crockpot Chicken

This was adapted from a Taste of Home recipe.

Honey Crockpot Chicken

Ingredients:
1/2 cup orange juice
1/3 cup honey
1/4 cup lemon juice
1/4 cup soy sauce
2 T minced gingerroot
12 garlic cloves (I used minced ~1/2 T)
1/2 t pepper
1/4 t salt
4-6 boneless skinless chicken breast halves

Place chicken breasts in crockpot. In small ball, combine remainder of ingredients and pour over chicken. Cook in crockpot for 6-8 hours on low.

Our Review: This was ok but had a pretty strong weird taste to it.

Mackeral Patties

This one is one from my childhood.

Mackeral Patties

1 sleeve saltine crackers (crush)
1 can mackeral (or salmon) (drain and remove bones)
1 egg

Mix together all ingredients. Make into approx. six patties. Heat on stove to brown on both sides.

I served this with mustard for dipping, macaroni and tomato juice, fried potatoes and fruit.
