Weekly Menu

I'll post recipes and pictures after I have made new or noteworthy meals.

Not all of my dinners will be gourmet, who am I kidding, none of them will!! I will admit I use a lot of prepackaged foods but I'm a busy mom! I might not always get to every one of the meals if we have a hectic week and end up at Sonic or another fine eating establishment but this is my attempt at trying to try out some of the great new recipes I have been pulling from random places and cooking healthier for my family!

This week...

Grilled Cube Steaks, boiled potatoes, corn, fruit cocktail

Baked Coconut Chicken, cheesy hashbrowns, green beans, peaches

Mackeral Patties, fried potatoes, macaroni & tomato juice, pineapple

Chow Mein (I use the LaChoy in a can but I use ground beef instead of the meat that comes with it but I do use the juice off of their meat), chow mein noodles, cheese slices, mandarin oranges

and one night, Carrot Bread

Easy Chocolate Eclair Squares

This recipe came from http://healthycookingforfamilies.blogspot.com/ although I did change some of the ingredients from natural to what I could find at the grocery store.
















Easy Chocolate Eclair Squares

Ingredients:
2 cups cold milk, divided
1 pkg. (4 serv.) vanilla pudding
1 pt Heavy whipping cream
1/4 cup sugar
Honey graham crackers (you'll use almost the whole box)
4 squares BAKER's Unsweetened Chocolate (I used semi sweet)
1/4 cup (1/2 stick) margarine
1 1/2 cups powdered sugar

Mix pudding mix with 1 3/4 cups milk with a whisk; place in refrigerator for a few minutes.

Pour heavy whipping cream ans sugar into a mixing bowl and beat on HIGH until very stiff peaks form.

Gently fold whipped cream into chilled pudding.

Line the bottom of 13x9 pan with graham cracker squares. Pour half of the pudding mixture on top and spread evenly. Place another layer of graham crackers on top and then another layer of pudding mixture. Top with a layer of graham crackers.

Melt butter and chocolate in microwave safe bowl for 1 1/2 minutes. Stir until chocolate is completely melted. Add remaining milk (1/4 cup) and powdered sugar. Stir until well blended. Pour immediately on top of graham crackers.

Refrigerate for 4 hours before serving.

Our Review: This is SO good. All of us loved it! I even had it for breakfast the next day :-)

Bourbon Sauce

This can be used as a sauce for chicken, beef or pork.

Bourbon Sauce

Ingredients:
1/4 t minced garlic
1/4 t ginger
1/2 t crushed red pepper flakes
1/4 cup apple juice
1/4 cup brown sugar
2 T ketchup
1 T cider vinegar
1/2 cup water
1/3 cup soy sauce

Put all ingredients in a sauce pan, heat over medium heat until well blended. Add meat cut into bite size pieces to sauce. Bring to hard boil. Reduce heat and simmer for 20 minutes.

Bourbon Chicken

I found this recipe online but changed it quite a bit, I was so excited to find this b/c bourbon chicken is one of my favorites!

Bourbon Chicken

Ingredients:
boneless chicken breasts
1/4 t minced garlic
1/4 t ginger
1/2 t crushed red pepper flakes
1/4 cup apple juice
1/4 cup brown sugar
2 T ketchup
1 T cider vinegar
1/2 cup water
1/3 cup soy sauce

Cook chicken. I did this by cooking 4 frozen breasts in the crockpot on high for about 4 hours but you could also cook in a skillet with a little oil or in the microwave. Cut chicken into bite size pieces.

Add all ingredients (except chicken) to a saucepan, heating over medium heat until well blended.

Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes.

This can be served over rice but we didn't. We served this with lipton noodles, steamed veggies and peaches.

Our Review: This is REALLY good!!!! The girls didn't care for it but Mike and I both loved it. This WILL be made again. The leftovers will be yummy in a salad! I think I'll even try the sauce over beef and pork.

Crunchy Onion Chicken

This recipe came from a magazine cut out.

Crunchy Onion Chicken

Ingredients:
1 lb. chicken breast or tenderloins
6-8 oz. french fried onions (in canned goods section)
1 egg
2 T flour

Combine onions and flour in ziplock bag and mix together while smashing the french fried onions. Dip chicken into egg and then into flour/onion mixture. Place in 13x9 pan sprayed with cooking spray. Cook at 350 for 30 min. or until chicken is cooked through.

We served this with lipton noodles, green beans and apricots.

Our Review: This chicken was really good. I even used it cut up in a salad the next day.

Pasta Medley Salad

This is one of our family favorites during the warm weather months!

Pasta Medley Salad

Ingredients:
1 (16 oz.) pkg. rotini (I use garden/tri color)
14 oz. Low fat turkey smoked sausage, cut into 1/2 in slices & halved
3-4 carrots shredded (~1 cup)
1 container cherry tomatoes, halved
1/2 cup sliced ripe black olives
1 bottle fat free Italian dressing

Prepare rotini according to package directions; drain and rinse in cold water. Combine rotini with remaining ingredients, toss. Chill overnight for best taste.

**This makes a large batch of pasta salad. It can be halved if only a small amount is needed.

We served this with crescent rolls and strawberries.

Crockpot Pasta Meatball Soup

This one was adapted from a Taste of Home recipe.

Crockpot Pasta Meatball Soup

Ingredients:
1 cup uncooked pasta (I used 1 1/2 cups whole wheat penne)
32 frozen Italian meatballs
2 cans (14 1/2 oz each) chicken broth
1 can (28 oz) diced tomatoes, undrained
1 1/2 cups frozen sliced carrots (could use corn in place of this)
1 can (16 oz.) kidney beans, rinsed and drained
1 jar (14 oz) meatless spaghetti sauce
1 cup frozen peas (I used canned)

Cook pasta according to package directions, drain. Meanwhile, combine remaining ingredients in the crockpot. Add pasta to crockpot and cook on low 6-8 hours.

We served this with garlic bread and fruit cocktail

Our Review: This soup was very easy and good! Definately will be made again.

Muffin Tostados

This one was adapted from a magazine recipe.

Muffin Tostados

Ingredients:
12 (6 in.) four or corn tortillas
1 1/2 cup fat-free refried beans
1 lb. ground beef, cooked and drained
1 1/2 cup shredded cheddar cheese

toppings:
lettuce
tomato
sour cream
black olives
salsa

Preheat oven to 400. Mist every other cup of two 12 cup muffin tins with cooking spray. Press a tortilla into each sprayed cup, flattening out edges, and bake until golden, about 8 min.

Divide beans among tostadas, top with beef and cheese. Return to oven and bake until warmed through, 7-10 min.

Place tostados on plate and top with toppings as desired.

We served this with cantelope slices.

Our Review: This one tasted okay but was really a mess to eat and we couldn't fill them very well so there was a lot of "extra" tortilla.
