Baked Pizza Mac


I found this recipe in the Kraft Food & Family magazine.

Baked Pizza Mac

1 can (8 oz) pizza sauce, divided
1 pkg Kraft Mac & Cheese, prepared as directed
1 lb. ground beef, cooked, divided
1 egg, lightly beaten
1/4 tsp. garlic powder
1/2 cup shredded mozzarella cheese

Set aside 1/4 cup of pizza sauce. Combine prepared mac & cheese, 2/3 of the meat, remaining pizza sauce, egg and garlic powder.

Spoon into 9 in. pie plate. Top with remaining meat, 1/4 cup pizza sauce and mozzarella cheese.

Bake 15 min. at 400. Let stand 5 min.

4 servings. 1 1/2 cup each.

We served with salad, raw carrots and pears.

Our Review: This will go into our recipe box. It was easy and tasty. It won't be one I cook all the time but it was a nice change up and it used a family favorite, mac & cheese. Brooke ate and liked it but Lexy wouldn't try it (she didn't want everything mixed together).

Chicken Tetrazzini

Ok so this is my first weekly *new* recipe. And I was even brave enough to try it on a night when we were having dinner guests...thank you Grammy/Papa for being our taste testers! I found this recipe in a recipe book that I had gotten for myself last Christmas but I made some changes including that the recipe called for Turkey and I substituted chicken.

Chicken Tetrazzini

Spaghetti (about 4 cups)
2 cans cream of mushroom soup (I used 98% fat free)
2 chicken bullion cubes
1.5 cups boiling water
celery salt
pepper
shredded cheddar cheese
1 large can all white chicken

Boil spaghetti and drain. In bowl, dissolve bullion cubes in boiling water. Add soup, celery salt, pepper to bullion water, mix. Add spaghetti, chicken and a little cheese to bowl and mix well. Pour int 13x9 pan and top with remaining cheese. Bake at 350 for 30-40 minutes.

I served this with salad, breadsticks and mixed fruit.

Our review...it will be put into our recipe box!!! Everyone liked it! We thought it was a great variation from our tuna casserole. Easy, not a lot of ingredients and kid friendly!

Another fun one - Nacho Flower

We had a nacho flower for dinner tonight. Cute and yummy!

Just beef, refried beans, cheese, black olives and tortilla chips.

A fun idea - popcorn chicken kabobs


This is Brooke's favorite thing to make and eat for dinner. I think it's time consuming but it is VERY kid friendly!
We baked the popcorn chicken in the oven and then used wooden sticks to put on the chicken, pineapple chunks, purple seedless grapes, and cherries (rinse or you'll have red all over everything!). You could use whatever you have on hand.
We served this with Lipton Noodles, chicken flavor and raw carrots/celery.
For dessert Lexy and I made peanut butter cup "blizzards". Just vanilla ice cream, cut up pb cups and a little milk in the blender/food processor!

Chicken Enchiladas - tried and true favorite!

Put frozen chicken in crock pot on low for 6-8 hrs.

Debone chicken and heat in pan with a can of cream of chicken soup, a few green chiles and about a cup of shredded cheese

Pour 1/2 can of enchilada sauce and a few green chiles on bottom of 13x9 pan. Dip flour tortillas in sauce and then fill with chicken mixture and roll. Pour remaining sauce, chiles and some cheese on top. Heat in 350 oven for about 15 min.
Serve with salad, fruit and...

Have beautiful daughter bake cinammon roll squares!
We've had these enchiladas before but not for a long time, even Brooke loved them (she went back for seconds) so those of you that know how picky she can be knows that these must be YUMMY!!
